Professional Roners: The Ideal Tools for Low-Temperature Cooking
The new frontier in gastronomy introduces professional roners, tools designed for sous-vide cooking that allow us to prepare delicious and healthy dishes.
Food is sealed in a special bag specifically designed for this cooking method, and it comes out perfectly cooked and flavorful thanks to the extremely precise temperature control system.
What is a Kitchen Roner?
A professional roner is a tool designed to facilitate kitchen management, making it particularly useful for restaurants. It allows for the cooking of various foods while preserving their nutritional properties. It is the ideal tool for those who want to experiment with light and flavorful low-temperature cooking using alternative methods.
There are essentially two types of roners available on the market, immersion and integrated in the cooking vessel:
- The immersion roner has a shape very similar to an electric hand blender. Ergonomic and slim, it can be used in any pot, thanks to a mounting system that keeps it stable for the duration of the cooking process.
- The integrated roner is essentially a pot with temperature control, in which food is cooked. It has a basin that is filled with water, in which the vacuum-sealed food is slowly cooked at low temperature.
Both types are highly recommended for professional use but are also suitable for those who enjoy recreating delicious, light, and stress-free dishes at home.
This special tool offers several advantages:
- Food stored in vacuum and cooked in the bag is pasteurized, reducing bacterial load and making it safe, even if it doesn’t reach high temperatures.
- It provides greater temperature control without the stress of monitoring the cooking process.
- It preserves flavors and aromas without the need for additional seasonings that could weigh down the dishes.
The result is a healthy yet flavorful dish, easy to prepare, without the hassle of regularly checking the cooking process.
Professional Roners: How to Choose the Best Models
Professional roners are highly valued tools because they make it easy to manage the cooking of various foods. Once cooking times and temperatures are set, the roner does all the work. Foods are cooked according to the preset program, with excellent results, similar to those achieved in top chef kitchens.
There are different models of professional roners available, and choosing the right one depends primarily on how you plan to use it. Various models are available on the market, with different power levels and temperature ranges. The larger models that can heat a greater quantity of water can reach 1500 watts, but they also affect costs and energy consumption. For home use, models with 800 watts are ideal—they are smaller and less impactful on the electricity bill.
In restaurants, on the other hand, more powerful models are recommended to achieve the desired results. Some foods must be cooked at low temperatures to maintain tenderness and flavor, and professional roners can help a chef accomplish this.
The most advanced roners are equipped with a temperature probe that can be inserted directly into the bags. Some even come with a smartphone app, allowing you to monitor the cooking process remotely. The minimum and maximum temperature values for these models range from 20°C to 100°C, with the ability to adjust by one degree at a time.
What Foods Can You Cook with a Roner?
A wide variety of foods can be cooked with a roner, ranging from eggs to meat, vegetables, and fish. It is particularly well-suited for cooking fattier foods, such as certain types of meat, as no additional seasoning is required—just add herbs and spices for an even more flavorful result.
All this is done simply by submerging the food, still sealed in its bag, programming the temperature and duration, and letting the roner do the rest.
